« When I was student, studying abroad, the magic word is ‘are you integrated with the French?’ And, like you said, I was a French snob. The French (culture) and language got me out of a very difficult childhood and the town where I lived in.

So, I didn’t really want to go back to the American side of me at that moment. I wanted to go further into my French side. At the time, I didn’t hang out with American friends that much, I wanted to make French friends and do French things.

And that continued until I worked on this French/American TV show, the team was French and the producers were American. And that’s when I started to see the bridge. There is a chapter in my book, Let Them Eat Pancakes… when you have lived here a long time, there is a good part of your past – I am sure we all have good memories of going to a diner where everyone is accepted, there is no pretense. You can be the richest person in the world, a working class guy, you’re all welcome.

You’re all enjoying this atmosphere of being yourself. That’s what I want to bring to the French.

Because, at the time, they only know fast food as a McDonald’s-type place.

And I was like, ‘No, that is the exact opposite!’ I want a place that has a soul, that has culture, and where you can meet and exchange. » – @craigcarlsonauthor
